Nut Seed Bites: Mini-muffin Recipe

People LOVE this mini-muffin recipe. I get asked for the recipe each time I share these treats with friends.

They’re low-carb, sugar-free, and I’ve bumped the protein because, well, protein.

Funny enough, the first couple times I made it, I didn’t measure anything – it was straight from my head. I had to recreate it a few more times to get the measurements just right.

Now I”m finally able to share the recipe with you and everyone else who has been asking for it!

This mini-muffin recipe has no added sugars and it’s also full of healthy fats and a bit of protein to keep you feeling full for hours. I recommend pairing it with a green smoothie!

Nut Seed Bites: Mini-muffin RecipeNut Seed Bites Mini-muffin Recipe

Yields 24 mini-muffins, 133 calories each. 

MACROS: 10 Carbs, 9 Fats, 5 Protein, 3 Fiber, 1 Sugar

Preheat oven to 375F.

In a medium-sized bowl, cream together:

250 grams peanut butter (Or almond butter, or your choice of nut butter)

70 grams coconut oil

200 grams egg whites


30 grams of whole flax seed

40 grams chia seeds

60 grams raw sunflower seeds

50 grams slivered almonds

80 grams erythritol (or your favorite sugar substitute, though I have not tried others and can’t recommend them)

50 grams shredded unsweetened coconut (I recommend large-flake for the texture)

50 grams flavored whey protein powder (I use a stevia-flavored protein powder called Combat Nutrition Cookies & Cream, but almost any sugar-free flavored protein powder will do. I recommend flavored for the added sweetness)

7 grams cinnamon, (1/2 Tbsp, or to taste)

Stir in:

115 grams of quick oats

Feel free to add raisins or chocolate chips for a sweeter treat. This recipe is uber-flexible. For example, you can substitute walnuts for slivered almonds.

Baking Instructions:

Lightly spray two mini-muffin pans and spoon in batter. Bake at 375 for 10-12 minutes.

Note: I baked these for 10-12 minutes in a toaster oven, one pan at a time (RV life) so you may need to modify the cooking time if you’re using a conventional oven.
